Sweet Potato Tacos

Quick-yummy-healthy, and cheap dinner? Sign me up! Sweet Potato Tacos are a staple for mid-week dinners in our family. Let me know in the comments if prefer it with chicken, beef, or as we do-veggie style!

Ingredients: Sweet potatoes, oil (I used avocado oil), salt, beans (I used Pink Goya beans), cheese, sour cream, and salsa (Check out the Kroger, Private selection restaurant style, it’s great if you don’t like veggie chunks)

How to: Preheat your oven to 375. Wash and dry your sweet potatoes, (I did two for me and three for my hubby for measure) Take a fork and poke each potato 4-5 times. Sit your potatoes on your baking sheet, drizzle avocado oil all over them, a little salt, and then coat them evenly (hands work great here or the oil brush if you prefer). Wrap them individually in foil, bake in the oven for 60 minutes. They should be nice and tender. Warm up your beans in a pot, add a little garlic powder (double garlic always in my opinion) and some minced onion. Now you’re ready to assemble! Cut open your sweet potato and load it up. Butter (optional, but yummy), dash of salt, beans (hold back the bean juice), sprinkle cheese, a bit of sour cream and salsa on top and dinners done! The perfect mix of sweet and savory. Vegetarian style is delicious, but you can add ground beef or chipotle chicken to take it up a notch! Enjoy!
